Itchy's guide to... making the perfect cup of tea
Everyone's fallen foul of tea politics at some point. A good strong brew presented at the optimum moment can cement a relationship, while a cup of tepid dishwater can drive a wedge between a blossoming friendship. Make sure you get your PG Tip-top.
We asked Edward Bramah, from the London Museum of Tea and Coffee, for a few quick pointers.
Step 1
Apparently, preparation is key. You should start as you mean to go on. Heat the pot just before your water comes to the boil, so the tea doesn't lose temperature, and be sure to empty off all the warming water.
Step 2
Always use freshly drawn and boiled water. Re-used water loses its oxygenation and will affect the taste. Add approximately four spoons of tea to a large pot, then pour in the boiling water and swirl gently. Thorough infusion is the key here – a good five minutes should do the trick.
Step 3
The Royal Society of Chemistry advocates that milk must always go in before the water, as it allows the milk to cool the tea, and will stop any potential curdling.
Step 4
Pour through the tea strainer, add sugar to taste, and savour. Possibly with a biscuit.
